For pump pressures of 1 bar and 0.5 bar, the foam stability was higher at the intermediate temperature of 10 °C than at 15 °C. At 15 °C and 1.5 bar—the highest values studied—the time-averaged foam volume was a whopping 82.9% of the total drink volume. The consistent trend was that warmer temperatures and higher pressures create more foam because warmer beer degases more quickly, and faster dispensing creates more foam in the early filling process. Once the cup has a layer of liquid that covers the bottom, the flow becomes less turbulent, and the rate of foam formation rapidly slows. Delgado and his colleagues found that nearly all the beer foam forms within the first second, when the flow into the cup is especially turbulent. Beer foam is often viewed as the hallmark of quality.

Review: Tailspin Ale Fest Had Plenty Of Craft Beer Options, But ... (Louisville Eccentric Observer)

[3 Floyds](https://www.3floyds.com/over-21/?redirect_to=https://www.3floyds.com/) (Munster, Indiana) and their [Zombie Ice](https://www.3floyds.com/beer/zombie-ice/), which is basically their Zombie Dust pale ale recipe doubled. [Dogfish Head](https://www.dogfish.com/)’s [Citrus Squall](https://www.dogfish.com/brewery/beer/citrus-squall), which is part golden ale and part tequila-inspired cocktail. Plus, there were plenty of open pockets of space to go and get out of the sold-out crowd of several thousand, and the abundance of breweries meant beer lines were generally non-existent unless it was a special tapping. I don’t think I’ve ever seen a more diverse selection of food choices at any beer festival I’ve ever been to, although it would have been nice if a list had been posted of all of them on the Tailspin website. [Against The Grain](https://atgbrewery.com/)’s [70K](https://untappd.com/b/against-the-grain-brewery-70k/339340), aged in Green River bourbon barrels, was a big, sweet, roasty, bourbon-filled treat that hit like a tank. Also top-notch was [Butchertown Brewing](https://butchertownbrewingco.square.site/)’s [Imperial Gluten-Free Raspberry Puff](https://untappd.com/b/butchertown-brewing-imperial-gluten-free-raspberry-puff/5237864), which blends raspberry and marshmallow for a deliciously sweet sour beer that doesn’t taste anything like the 9% ABV that it is. And [Holsopple Brewing](https://www.instagram.com/holsopplebrewing/?hl=en)’s [Coffee Stout](https://untappd.com/b/holsopple-brewing-coffee-stout/2313863) proved once again why it is a contender for the best local coffee beer, in case you ever doubted it. The [Apocalypse Brew Works](http://apocalypsebrewworks.com/) and [LAGERS](https://lagersclub.com/the-club/) collab the [English Mild,](https://untappd.com/b/apocalypse-brew-works-kentucky-english-mild/458765) run through [a Randall](https://dogfishalehouse.com/what-is-a-randall/) and infused with coffee from [Pregame](https://www.pregamecoffee.com/) and vanilla beans, was excellent on numerous levels. The overwhelming number of breweries and jaw-dropping number of beers, the scenic location, the limited amount of tickets and smaller crowd size — it is truly a craft beer mecca to which no other can compare (with the exception of the [Great American Beer Festival](https://www.greatamericanbeerfestival.com/) in Denver, and here locally the sorely missed Keg Liquors Fest of Ale in New Albany – Todd Antz, come back!) Tailspin is absolutely getting there, though. Mother Nature is not a big fan of this area of the country this time of year (and by that I mean September – May). [Mile Wide](https://www.milewidebeer.com/) came through with a strong contender for my favorite sample of the day with their [Frivolous Ideation Pastry Stout](https://www.milewidebeer.com/events/2022/2/10/frivolous-ideation-pastry-stout-release), which is brewed with coffee and vanilla and leaves no doubt that you are drinking a 10% ABV beer. (Try to say that five times fast.) Plus, a staggering assortment of breweries and food trucks meant all lines were kept to a minimum, except for one, and we’ll get to that later.

When I was a head chef, I learnt a lot about stock rotation, and running a kitchen is quite similar in a lot of ways to buying for stores. Someone recently brought me a jar of honey from their backyard bees that I turned into a very tasty cake and it really made me reflect on how lovely and close-knit this community is. I was a chef for ten years, which taught me a lot about flavour, and production of products. I remember going to beer events years ago and it being a sea of men with beards and I would hardly see anyone that looked like me. But in reality, it's a decent amount of research and admin sorry to take the magic out of it a bit there. I'm always looking to stock new and exciting things, but there are also some breweries that I have really good relationships with and I trust that the products they put out will be good. To start with, every beer that I bought felt like such a punt. I'll take a couple of meetings with brewers and reps to try products and plan collaborations. I spend a lot of time working out what I think will sell in stores. I also take care of staff training to make sure the whole team is up to speed on all the products we range. I try to leave a portion of my buying to some lines that aren’t as big or hypey. "We do always say we’re a broad church," she says, "so we don’t want to alienate anyone or be snobby because good beer is for everyone.

We’re lucky in Scotland that the water tends to be soft, creating the perfect base, and I’m expecting the water here to be the same. I’ve remembered the bottle to take a sample of the water supply to get it tested. The mineral content can have quite a big impact on the flavour and quality of the beer. I then spend time finalising the job description for our new Head of Sales.

What became apparent at first was the sheer amount out there as we made our way through the different beers that fall within the category from Australian craft ...

Aroma carries the slightest hint of funk with ripe white grape and tropical lychee while mouthfeel is fuzzy and flavour is refreshingly light with a touch of tropical fruit and a nice, dry finish. What’s truly incredible in this beer, is how chewy those flavours feel along with a bitterness that is fully contained by the heavy coating of this thick body. With a very hazy, pale pour, tropical aromas jump out of the glass as Cryo Eldorado, Cryo Azacca, Talus and Nelson Sauvin deliver flavours of guava, passionfruit, pineapple, nectarine, mango… A cracking beer with great expression of tropical and juicy stone fruit hop character. A classic flavoursome WCIPA that’s now nearing iconic Queensland craft beer status, this is a showcase in balance where fresh hop flavours of pine and resin are matched with a caramel malt backbone. In the Autumn issue we also looked at a range of their other bottom fermenting beers including their Pilsner, Helles Lager and West Coast Pilsner . Pale straw in colour with brilliant clarity and a thick lacing white head, aroma delivers lime rind with a malt presence ahead of a clean malty profile with low bitterness and lime notes to finish. Pale copper with faint haze and a very thick fluffy head, classic American IPA hop aromas of orange, mandarin and pine resin with a malty crusty bread note summon strong hop flavours of citrus, candied orange peel and tree sap-like resin with a bitterness to match that lingers long. A blush orange-pink with brilliant clarity, the blend of fruit is evident up front as it’s poured. Full in body but with a soft pillowy mouthfeel and a balanced medium low carbonation. Malt flavours of soft and fresh white bread are followed by the same hop spice on the aroma, finishing with a medium high intensity hop bitterness that doesn’t dominate the flavours before it. Bright in clarity and gold with a persistent dense white head, earthy and floral hop spice aromas lead with a clean yeast undertone.
