1 tsp. Add 4 eggs, 1 at a time, mixing on low speed after each just until blended. Beat cream cheese, sugar, honey, lemon zest and lemon juice in large bowl with mixer until blended. or until center of cheesecake is almost set. Place dough on surface sprinkled with Bisquick; roll in Bisquick to coat. Spread over cake and top with toasted coconut. Cover and refrigerate until ready to serve. Add dressing and mustard; mix well. Remove yolks; place in small bowl. Peel eggs; cut in half lengthwise. Fold Cool Whip and pecans into mixture. Peel oranges and separate, cut into bite size pieces.

Hopping into a Happy Easter (Cayman Compass)

If the shelves of the supermarkets are any indication, Easter is just around the corner. How will you spend the holiday weekend?

Ave in the Kimpton Seafire + Spa is known for its brunches, and Easter Sunday will be a special one. Food and drink can be purchased at Kaibo, and puppies will be available for cuddles. Take part in the Bayshore scavenger hunt and make sure to look out for the Easter bunny. Reservations are required, as the parental units can sit and enjoy a beverage while the kids go a-hunting. Camping along the coast over Easter is a time-honoured Caymanian tradition, and although modern conveniences have taken away some of the aspects of ‘roughing it’, the goal remains the same – to spend time with family and friends, go fishing, and cook in the great outdoors. The island should be particularly busy this public holiday weekend, as rather than fly off for a short vacation, many people are instead opting to stay.
